Uncle Bill's Vegetarian Minestrone Soup

A hearty and healthy soup. Excellent on chilly days. Very easy to prepare.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Heat oil in a large saucepan over medium-high heat.
  2. 2
    Add chopped onion and sauté for 4 minutes or until just lightly browned.
  3. 3
    Add water, zucchini, carrots, canellini beans, celery, basil, oregano salt, pepper, tomatoes and garlic.

    Bring to boil; reduce heat, cover and simmer on medium-low heat for 25 minutes, stirring occasionally.
  5. 5
    Add macaroni, cover and cook an additional 10 minutes.
  6. 6
    Serve hot.

Excellent and hearty soup! Wonderful for the autumn and winter season when you want a nice hot homemade soup. I added diced potatoes, kidney beans instead of cannellini, and added garbanzo beans. Used chicken stock (4 cups total), but added at least a cup of water more. Instead of plum tomatoes, I used a 16 oz can of fire roasted diced tomatoes with all its juices. Omitted the salt, but my husband thought it could have used some. Will make again, especially when I have lots of veggies leftover!

    Very good and simple. Omitted the salt since the tomatoes have plenty. Added extra veggies. Excellent on any day.

    Excellent minestrone and sooo easy. My kind of recipe. Hard to believe you can have so much flavor in just 40 minutes but it's true. Used broth instead of water but otherwise didn't change a thing.

    This is just the flavor I was looking for in a minestrone soup when I was searching the web for a recipe. It tastes so much like the one at a local cafe that I like. I might add cubed red potatoes next time.
