Unbelievably Easy Potato Soup

Don't let the sparse ingredient list fool you. This is a recipe that's so easy to make, yet so delicious, that everyone inhales it. My mother was raised on this soup and she served it often to us. My grown daughters now demand it when they are home. To this day, entering the house on a cold day and smelling this soup is the most comforting, delicious aroma imaginable. It's also non-fat if you use skim milk. (But I like half & half, myself!)

SERVES 1 (change servings and units)

Ingredients

  • 1 large potato, per person
  • 1/4 cup chopped celery, per person (include leaves)
  • 1/4 cup chopped onion, per person
  • 1/4-1/2 cup milk or half-and-half or cream
  • salt and pepper, to taste

Directions

  1. 1
    Peel and cube potatoes.
  2. 2
    Put in a saucepan along with the onions and celery.
  3. 3
    Add water, but don't quite cover the vegetables.
  4. 4
    Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.

    Using a potato masher, coarsely crush the potatoes, but don't mash them--you want chunks left.

    Add enough milk or cream to thin to desired thickness and add salt& pepper to taste.

    (It will take a lot of salt!).

This was sooo Delicious I spiced it up a bit though. I used chicken broth instead of water. Added cream of celery with the milk&& lots of spices(dill,garlic salt,minced onions) topped with cheese, bacon and green onions.THANK YOU so much for the idea and recipe...Super Simple&& scrumptous

    MMMMMMMMM!!! Instead of water, I used chicken stock - and I added in a bunch of cut up carrots too... YUM!!! This is FABULOUS

    Very easy recipe! I left a few skins on for added flavor and texture in the soup. I also added some bacon bits and sharp cheddar cheese to bring out some of the flavors without adding so much salt. I spiced it up with salt, pepper, paprika, and garlic powder. It was wonderful. Thank you for the easy and yummy recipe!

    This is a really quick and easy way to have potato soup. My daughter and I had this for dinner last night. We added paprika, bacon bits and some parmesan cheese for added flavor. I made 4 servings so that she would have some leftover for the weekend. Very tasty. Served this with a Cesar salad which made for a great meal. Thanks.
