Ukrainian Garlic Bread Puffs: (Pampushky Z Chansykom)

Fried dough has an established place in many cuisines. Ukrainians like all types of dough in many forms: boiled, baked, fried. This is simply a yeast-raised bread dough fried in oil and flavored with garlic salt or oil. These little puffs are excellent served in baskets as appetizers or with soups. You can also roll them in sugar as for doughnuts.

SERVES 8 (change servings and units)

    Dissolve yeast in water, add sugar, and allow to foam. Combine flour, salt, oil, and yeast mixture and knead into dough. Or, in processor, combine flour and salt; with machine running, add yeast mixture and oil and process until dough forms. Allow to rest for a couple of minutes, then pulse a few more times.

    Place in a lightly oiled bowl, turn once, cover with plastic wrap, and allow to rise until double in bulk. Punch down. Pinch off small pieces of dough, roll between lightly oiled palms into 1 inch balls, and place on floured towel.

    Heat at least 2 inches of oil in a skillet until hot but not smoking. Drop in dough balls, fry on all sides, remove, and drain on paper towels. Roll in or sprinkle with garlic salt. Serve warm.

Oh my goodness I remember my grandma making these all the time! I can't wait to make these buns for my husband! My grandma passed on suddenly and I did not have the chance to learn everything I wanted to learn from her. Thank you very much for posting Olga!

    These are good as is but I just had to try something different.I have an injector like you inject turkey with.I filled it with blackberry jelly and injected the puffs with the jelly after cooked.I then rolled them in powdered sugar.Wow,I turned them into jelly donuts.They were great.I had the puffs to go with our meal and dessert too. Thank you for posting this one Olga and just so you know,my bf is a tough critic.But,he liked these both ways.
