Uncle Bill's Microwave Potato Wedges

After a lot of experimenting, I came up with this easy to make and very tasty recipe.

SERVES 2 -4 (change servings and units)

Ingredients

Directions

    In a mixing bowl, combine olive oil, Italian seasoning, paprika, salt, and garlic powder; mix well to blend.

    Scrub potatoes well.
  3. 3
    Cut potatoes lengthwise into eight wedges.
  4. 4
    Drop potato wedges into seasoning mixture and toss to coat.
  5. 5
    Arrange potato wedges in a 9" x 13" microwave-proof casserole dish.
  6. 6
    Pour remaining seasoning mixture over potatoes.
  7. 7
    Microwave on HIGH (full power) for 8 to 10 minutes or until tender; turning wedges over at half time of cooking.

    Remove from microwave and sprinkle with grated parmesan cheese.

    Serve hot.

This really works! I used Hungarian smoked paprika instead of sweet and it really gave the potatoes a great flavor. I wanted french fries to go with the burgers I had made, but didn't want to heat up the kitchen. These potato wedges were the perfect answer. Thank you!

    Made these for my husband tonite! Sometimes I can't find the time to bake his potatoes in the oven so this recipe will come in handy! I used one potato (peeled it) but kept the seasoning amts the same. I used 1/4 + 1/8 tsp garlic powder instead of the granules, and used garlic salt for the regular salt. I cut them into "strips" so they'd resembles fries & forgot to use the parmesan! Will remember for next time. I cooked mine for about 6 min. They weren't crispy like my man likes them, but they were yummy dipped in ketchup & went very well with his barbecued chicken sandwich . Thanks so much for sharing!

    Very easy to make. Next time I will probably add more of the italian seasoning mix and maybe some tabasco for a little kick. Be sure to cut your potatoes in the same size for equal cooking.

    I made these with fingerlings potatoes and crushed garlic.they turned out fantastic. I love to use my microwave for cooking. Now I have to look for Hungarian paprika; I have the regular one.I will be making these again. Thanks for posting. Rita
