Two Sisters' Chicken Salad

I hope you enjoy this recipe from the Court of Two Sisters in New Orleans. Prep time includes time to chill.

SERVES 4 -8 (change servings and units)

Ingredients

Directions

    In a large salad bowl blend together chicken, celery, onions, salt, lemon juice, and grapes. Refrigerate 4 hours or overnight.

    Just prior to serving add mayonnaise, oranges, and almonds, tossing gently to avoid breaking the oranges.

    Serve on leaves of Romaine or Boston lettuce or scoop generously into a avocado half.

    Serves 4 large portions or 8 smaller ones.

This is fabulous and so easy to make! I love the Mandarin Oranges in it! Made according to the instructions and served with lettuce and croissant rolls for a light summer evening meal

    I've been making this for years and had no idea that it was from The Court of the Two Sisters! We love it! I always make it after Thanksgiving with leftover turkey. It's really delicious with turkey or chicken, so give it a try if you haven't already. We made it for a ladies' lunch at church about a million years ago & everyone loved it & it's still a real winner. I'm so glad you posted it, Bev!

    What a lovely salad! I used red grapes (halved) and red onions so along with the celery and oranges, it was a very colorful and pretty salad. The recipe caught my attention because we ate at Court of Two Sisters while visiting New Orleans a couple of weeks ago. I did not have this dish so I don't know if it tastes like theirs, but I do know it is very fresh-tasting and delicious! Thanks for sharing the recipe.

    Absolutely delicious chicken salad! I halved the recipe for 2 generous servings and used it as a sandwich filling in some hearty whole wheat bread. This is probably the best chicken salad I've ever had. The addition of the fruit and nuts is genius! Thanks for posting such a wonderful recipe, Bev!
