Tuscan Soup a La Olive Garden

If you have enjoyed the "ZUPPA TOSCANA" at the Olive Garden, then you will love this Copy Cat recipe. If you have not had it, then you need to try it.

SERVES 6 (change servings and units)

Ingredients

Directions

    In some olive oil sauté the onion and garlic until transparent.
  2. 2
    Add water and chicken base or 2 quarts chicken broth.
  3. 3
    Add the potatoes (I like to use frozen hash browns that I always have on hand).
  4. 4
    Add the seasonings.
  5. 5
    Bring to boil. Cover with lid and simmer.
  6. 6
    Brown the sausage, breaking up into small pieces, and drain in a stainer.
  7. 7
    Wash the kale, remove the stems/rib. Slice across you can add fresh or thawed frozen spinach squeezed dry).

    Add the sausage and kale to your saucepan and cook until potatoes are tender.

    Add the can of evaporated milk and heat through.
  10. 10
    Check to see if you want to add any salt.
  11. 11
    Serve with freshly grated Parmesan cheese. Enjoy.:-).

Thanks for a fantastic O.G. take off Koechin! Absolutely loved it. And so much healthier then the version made with heavy cream. I used turkey Italian sausage to make it even lighter and chicken stock. I love the idea of the frozen cubed hash browns, worked great and what a time saver. This will be made again and again.

    This soup was lovely. It did taste different than the Olive Garden version, but everyone who tried it agreed this actually was better. Plus, this was so simple... barely any work and you end up with a great pot of soup. I did have to substitute spinach for kale, since I didn't have any on hand, but it worked well with the soup, and I think it will just be ever better with kale.

    I gave this 5 stars. My family loves this soup. It's a must have at Olive Garden. We think this tastes almost just like Olive Gardens. I loved the fact this recipe called for evaporated milk as that's cheapier then heavy cream as other recipes have called for. When I made this I used mild sausage and buffalo chicken sausage as that's what I had on hand. I also increased the sausage as we like alot of sausage. When I made another recipe like this and this recipe I didn't know what chicken base was so I used Lisa Marie brand premium soup base with chicken fat. I followed the rest of the directions from here. This is very yummy and we will have again. Thanks for posting a yummy recipe. Christine (internetnut)
