Turkey Stuffed Peppers

There was a sale at the grocery store for ground turkey. Seems like there is one every week! This is a really simple recipe, even to make ahead a reheat later. Really tastey and good for you!

SERVES 4 , 4 Stuffed Peppers (change servings and units)

    Remove the tops from the peppers, seed and remove membrane.
  2. 2
    Steam in a microwave save container. Do this by putting one Tbs. water in the bottom of the container, and cover with plastic wrap. Cook until tender, approximately 3 minutes on high.

    Brown the turkey in 1/2 the olive oil until almost cooked through.
  4. 4
    Saute the onion, mushrooms and garlic in the olive oil on medium high heat.
  5. 5
    Add the thawd spinach and seasonings after the onions and turkey are browned and nicely caramelized. Cook the complete mixture until heated through.

    Divid the mixture among the 4 peppers. This is depend upon how big your green peppers are.

    Top with 1/4 cheese and broil in the oven until the cheese is browned. About 2 minutes, but be careful not to burn!

I prepared this for PAC Spring 2009, and therefore I made sure that I prepared this exactly as directed. Boy am I glad that I did--I think normally I too would have added rice, but I was pleasantly surprised to find that ti didn't need any at all! All of the ingredients blended so well together, and in hindsight the taste reminded me of one of my favorite breakfast sausages (I think this is due to the basil). Thank you for posting, KeelyShaw!

    This was really quick and easy and really yummy! I liked the idea of steaming the peppers in the microwave-quick and easy. I added a couple things, simply because I'm used to stuffed peppers having rice and marinara, so I added some brown rice and a little pizza sauce I had on hand just to hold it altogether. I loved the spinach in it, although I used fresh and sauted it with the onions and mushrooms and turkey. I didn't have sage so I added oregano. Eh, it worked. Thanks for a great easy recipe!
