Turkey Spaghetti Casserole

I got this from my MIL. I had it at her house one day after Thanksgiving, and I nearly slurped up the whole pan. That is something else considering I usually avoid her cooking as much as I can.

SERVES 4 (change servings and units)

    In a small pan, saute the vegetables in butter until tender.
  2. 2
    In a large bowl, combine the broth, soup, salt and pepper.
  3. 3
    In a 2-1/2-qt. baking dish coated with cooking spray,layer the turkey, spaghetti and vegetable mixture. Pour broth mixture over top.

    Cover and bake at 350F for 70-80 minute or until spaghetti is tender,stirring once.

    Uncover; sprinkle with cheese and paprika. Bake 5- 10 minutes longer or until cheese is melted.

I gave this a four star because I thought it was ok, but my husband loved it. I did twick it here and there. I didn't have a raw carrot so after my onion, celery (and green pepper) was cooked I added a can of carrots. I also added garlic. I used chicken instead of turkey and to speed things up I used cooked spaghetti. I thought my husband was going to eat the whole thing.

    Great way to use up leftover turkey. I think it tastes even better the second day.

    I made this for dinner tonight with some minor changes. I was looking for a reciepe to use up ground turkey that I've had in the freezer for awhile. I really don't care for ground turkey unless it has a sauce, so this is what I tried. I sauted a lot more mushrooms, carrots, onions, celery, and green peppers. The only problem that I had was that I should have put the spaghetti on the bottom, then turkey, vegetables, and so on. Cuz some of the spaghetti was sticking up above the casserole so some of the tips were hard. For some reason I thought the dish would bubble and cook all of it. Other than that it was very good. I left our paprika, but added parmasean cheese and chives on top of jack cheese. My husband kept saying, "This is awsome." He wants me to try it with left over shredded turkey. Which would be hard for me since I refuse to cook a bird. But I would consider making it with regular ground hamburger or shredded chicken. Thanks for the great reciepe.

    I made this for my company last night for the first time and it was delicious! I doubled it using canned mushrooms instead of fresh. Instead of using two cans of soup though, I substituted one can for a cup of fat-free sour cream (to keep sodium level down). I used chicken breasts instead of turkey. It was yummy! Thanks for sharing.
