Turkey Burgers With Flavor

I haven't tried to cook with ground turkey for ten years. I never liked it before. Since it is so healthy and low in fat I tried to infuse the turkey with flavor and this recipe did the trick. The consistency is much improved too. If you like cilantro and mango flavors, you will love these delicious burgers. So easy to make and can be made a day ahead.

SERVES 6 -8 , 6 -8 sandwiches (change servings and units)

Ingredients

Mango coconut pepper sauce

Burgers

Directions

    In food processor combine Serrano pepper, coconut, lime juice, zest, paprika, cilantro and sugar. Blend until Serrano pepper is in tiny bits. Add mango's and pulse until smooth. Taste and add more sugar or pepper if needed. Reserve 1/3 of sauce in separate bowl for basting.

    In a bowl combine ground turkey, cilantro, onion, garlic, paprika, egg whites, bread crumbs and salt and pepper. Incorporate salsa or sauce a little at a time checking to make sure patties hold up. Add more bread crumbs or use less salsa/ sauce if necessary. Form into patties and refrigerate until ready to grill.

    Preheat grill to 400 degrees and brush rack with oil. Grill patties and turn carefully, basting with reserved mango coconut pepper sauce until interior temperature reaches 170 degrees. Using a clean brush, spread small amount of mango coconut pepper sauce onto bottom bun, place turkey on top of bun and spread more sauce on top of burger. Serve with "Zesty Pineapple Slaw.".

These aren't your normal turkey burger, obviously and we welcome the twist on it. I like using ground turkey a lot and I can use all the good recipes I can find for it. This recipe yields very tasty burgers that are unique and far from ordinary. I enjoyed the sauce and doubled it use in the actual burgers in place of the salsa. Thank you for sharing this treat! Made and reviewed for PAC Spring 09.
