Turkey Breakfast Sausage Patties

I combined different spices to achieve what tastes almost as good, if not better than regular sausage. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

SERVES 4 -6 (change servings and units)

    Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
  2. 2
    If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.

    Form into patties and cook as needed, freezing leftovers.

    Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

Nice sausage recipe. I didn't refrigerate overnight and the sage taste was a little over the top. I'm hoping that the flavor will mellow out a bit after sitting overnight. I didn't have fennel seed on hand so I used caraway seeds instead. I figure any anise-flavor seed would do. So yeah, great tasting sausage. I'll maybe cut down the sage to 1 tsp next time.

    Actually cheated - have side beef and wanted b=fast sausage - great with ground beef too! Thank you!

    I make this recipe so much, I made a blend of the spices so when I need to make it I just add 2 1/2 T. of the blend rather than getting out 11 different spices every time.

    Very nice balance of seasonings. Next time I may cut the salt a little bit, but other than that I wouldn't change anything. The next day, I combined my leftover sausage with ground beef, bread crumbs, egg, and a little parsley and made some terrific meatballs.
