Tuna and Corn Fritters

These little fritters - or 'tuna pancakes' as my 5 year old calls them, are fast and nutricious - and loved by big and little people alike - especially my very fussy 5 year old. You can even can add sweet chilli sauce and some fresh coriander to give them an Asian flavour.

SERVES 1 -2 , 10 -12 fritters (change servings and units)

Ingredients

  • 100 g canned tuna in water
  • 125 g creamed corn (2-3 tablespoons fresh corn can be substituted)
  • 1/2 small onion, finely diced
  • 1 tablespoon flour
  • 1 egg
  • 1 tablespoon grated cheese
  • 1 tablespoon chopped fresh parsley (optional)

Directions

    Mix all the ingredients together in a bowl.
  2. 2
    Heat up a frying pan.
  3. 3
    When the pan is hot, spoon the mixture in heaped spoonfuls into the pan.

    Cook in batches for about 3 minutes each side, or until both sides are golden brown.

    Remove from the pan, and continue cooking in batches.

Really nice. Doubled up the recipe to make about 8 patties in the end and put some coriander instead of parsley. I agree that you want to keep them on one side for a bit longer to let them keep consistency, also a good "flipper" to turn them quick is a good idea

    I used a 425g tin of Tuna and a 425g tin of Creamed Corn (that's what was in my cupboard) I used 4 eggs 4 tablespoons of flour, 4 tablespoons of cheese and 1 onion and they turned out absolutely beautifully, the whole family practically breathed them in!! Healthy and Delicious

    Absolutely loved the flavor (and health) of these! I had a bit of trouble getting my first batch to stay in patty form...got more of a mush. For the second batch, I cooked them a bit longer (more like 5min per side) and they held together a bit better. Next time I might add a bit more flour though. Try this! It's awesome!

    This recipe was amazing! Everybody in my family loved it, and it was really healthy too. It's like the low carb, low fat version of really good tuna helper (the normal staple of my family's meals). Except to be honest and fair, it's way better than Tuna Helper.
