Tuna Patties With Ranch Dressing

I got this recipe from a Starkist tuna recipe booklet and it's so good. I think the Ranch dressing and cheese make them extra good.

SERVES 3 -4 , 8 patties (change servings and units)

Ingredients

  • 2 (6 ounce) cans tuna, drained

  • 1 1/4 cups breadcrumbs
  • 3/4 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup mayonnaise or Miracle Whip
  • 1 egg
  • 1/3 cup ranch dressing (low-fat works fine)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green pepper
  • vegetable oil

Directions

  1. 1
    Set aside 3/4 cup of the breadcrumbs.
  2. 2
    Combine all ingredients, except oil and reserved breadcrumbs.

    Form 8 patties, coating each side with the reserved bread crumbs.

    Heat appx.

    oil in nonstick skillet over medium heat.

    Cook 4 patties for 4-5 minutes on each side.

    You may need to add additional oil when you're frying them.

    Add more oil and cook remaining 4 tuna patties.

    Serve immediately.

This was a nice change from the typical uses of tuna. I used pouches of Starkist tuna creations, which worked wonderfully. The smoked tuna and the lemon pepper tuna were especially good in this recipe. The only other changes I made were to add a little garlic powder, seasoned salt and freshly ground pepper. I also subbed green onion for the regular onion. I used a mix of Italian four cheese and cheddar cheese. Will definitely make these again! Thanks!

    These were pretty good, but with the mayonnaise and ranch dressing, they were rather soupy making it difficult to form patties, so I added a little more breadcrumbs to hold them together. Made for Easter Egg Hunt Tag Game.

    We got the same recipe from the same booklet and it's one of the kids' favorites, hands down! Easy to make and good for protein. We do omit the pepper per family preference, though. In fact, dd just asked me last night when we were going to make them again...she says they're much better than tuna casserole or tuna salad sandwich! :o)

    Thanks for the great recipe. I also didn't use the green peppers (I didn't have any). I went with the cheddar cheese, and used a dry ranch dressing mix instead of a bottled ranch. I very much liked the taste and firmness of these patties. I made each patty 3oz, formed them to 1/2 inch thick, and put them in the fridge for 30 minutes before frying them for 4 minutes per side. They turned out a wonderful light brown color. This is a keeper.
