From Home Cooking, July/August 2005, came the original of this recipe. I've changed it slightly & serve is over brown rice with peas for a complete meal.

SERVES 8 (change servings and units)

Ingredients

    Preheat oven to 400°F, & spray a 13x9-inch baking dish with cooking spray.
  2. 2
    Cut each breast into 3 or 4 pieces & arrange them on the bottom of the baking dish.

    In a small bowl, mix together the ginger, paprika, onion powder & garlic salt, then add the Worcestershire sauce & mix well.

    Set aside 1/2 of this mixture, & brush the rest of it over the chicken pieces.
  5. 5
    Bake for 15 minutes, then turn the chicken pieces over & baste with the remaining 1/2 of the sauce.

    Bake an additional 15 minutes.

    In a medium bowl, combine the ketchup, soy sauce, pineapple & brown sugar, then carefully spoon this mixture over the baked chicken.

    Bake an additional 30 minutes.

My DH liked it but that was all. My picky eaters didn't and it wasn't one I would make again. I cut the baking time (of each section) in half and the chicken was not over cooked. One hour would way over cook chicken strips in my oven at 400 (cut the recipe to feed 4 could be why).

    This makes one delicious chicken dinner! I used only 1/2 the amount of brown sugar based on other reviews, and it turned out with a sweet-and-sour flavor that we all loved. The chicken was so moist and the sauce really gave a "tropical" flavor to the brown rice. You know we love a dish when someone scrapes all the little left-over bits from the baking pan, and my husband did just that. Thanks, Syd, for again one of your wonderful recipes.

    Mmmmmm! Delicious! A bit too sweet for me - next time I would add a little less brown sugar. Made the recipe as is and will make it again with less sugar and maybe some red pepper flakes to add a bit of kick. Thanks Sydney Mike!

    This was a fine recipe. The timing was way different for my oven, my chicken was done in about half the time listed. The chicken was very moist. My family liked it however I did not really care for the flavor much myself. I am glad that I tried this recipe but I would personally not make it again.
