Tortilla Omelet Wrap

Another one for the omelet lovers among us!

SERVES 1 (change servings and units)

Ingredients

Directions

    Whip eggs, half and half, salt and pepper to taste.
  2. 2
    Warm tortilla in skillet and set aside.
  3. 3
    Melt butter in a 10" non-stick skillet that has been coated with cooking spray and heat until bubbly.
  4. 4
    Pour in egg mixture and pull eggs toward the center from all sides.
  5. 5
    Remove from heat when the eggs are still moist, but no longer run.
  6. 6
    Top with remaining ingredients, being sure to sprinkle over entire omelet.
  7. 7
    Slide omelet onto the warmed tortilla and roll up bottom edge, then fold in sides about 1" and continue rolling until completely rolled.

    Lay in plate seam side down.
  9. 9
    Let rest for a couple of minutes and cut in half.
  10. 10
    Serve with favorite salsa or relish.

    Excellent pick-a-chef recipe. I did double the recipe for 1 tortilla and it just came out wonderful. Love the veggies in this. Thanks JQ

    Very nice recipe! I sauteed the ham, onions, & peppers before adding the eggs. Thanks JQ for a recipe I will use again!
