Tortellini Salad

A "tried and true" hearty main dish salad from a former co-worker!! This is perfect for potluck, or a side salad for your dinner. It a family favorite!

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Whisk dressing ingredients together shortly before serving.
  2. 2
    Cook tortellini according to package directions, about 8 to 10 minutes.
  3. 3
    Place in a large bowl and toss with olive oil.
  4. 4
    Add prosciutto, turkey, provolone cheese, peas, carrots and bell pepper and toss.
  5. 5
    Cover and refrigerate for 30 minutes.
  6. 6
    Pour dressing over salad and toss.

The salad was good and pretty, but a little too garlicy (and we like garlic). I made the salad a day ahead of time and it soaked up all the dressing. I will make this again, but using 1 clove of garlic, put olive oil over the salad and just before serving, I'll add the dressing.

    A very good salad when you want just a salad for supper, but a little heartier. Went great with fresh crusty bread.
