This is Fred's recipe. You can use any type of tomatoes. We prefer using cherry or grape tomatoes for this dish. The longer they marinate the better. A quick and easy side dish for the hot summer.

SERVES 4 (change servings and units)

Ingredients

Directions

    Wash tomatoes.
  2. 2
    Grate cheese.
  3. 3
    Wash and chop parsley.
  4. 4
    Shake salad dressing until well mixed.
  5. 5
    Combine all ingredient in bowl.
  6. 6
    Cover and refrigerate for 4 hours or overnight.
  7. 7
    *The longer the tomatoes marinate the better.
  8. 8
    You can add new tomatoes to mixture for about a week.
  9. 9
    You may also want to add more herbs and cheese to keep the bite.

Very easy and so delightful this is worth a million dollars!! Made this exactly, and totally loved this and so did everybody else! Wanted to add onion, but held off, and I am glad I did. Perfect just the way it was! Made for Everyday is a Holiday August 2009

    VERY yummy. I cut the recipe back using about a cup of huge grape tomatoes that I cut in half. I did add the sugar and really like that tiny addition. Keeper recipe Made for Everyday is a Holiday Tag

    This recipe is so easy, and so delicious. I made the recipe as you suggested, but using Splenda for sugar, and adding fresh purple onion rings to the tomatoes, and marinating for 4 hours. I drained the salad and placed on a salad plate lined with red leaf lettuce. The flavor was very good. I believe that cheese cubes would be good too, if you don't marinate too long. Thanks, Baby Kato, for sharing this wonderful summer salad. Definately to be a repeat recipe.
