Directions

    saute onions,basil, and garlic in a pan sprayed with vegetable oil spray.

    saute till onions tender.
  3. 3
    process whole tomatoes in a blender or processor till smooth.
  4. 4
    add tomato puree,diced tomatoes and sugar to onion mixture.
  5. 5
    simmer,uncovered, about 2 hours.

    add seasonings and heavy cream:cook till heated through.
  7. 7
    garnish with croutons or fresh basil leaves.
  8. 8
    makes 11 cups.
