Tomato and Basil Bruschetta

My first culinary "success." This recipe came from a great book _Cucina Amore_, and is often requested by friends and family.

SERVES 4 (change servings and units)

Ingredients

Directions

    Whisk together chopped garlic, vinegar, salt, pepper, and basil.

    When combined slowly drizzle in oil.
  3. 3
    Add tomatoes and let sit for 20 minutes at room temp.
  4. 4
    Meanwhile back at the bat cave, toast the bread.
  5. 5
    This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).

    When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  7. 7
    Place the bread on a cookie sheet and top with tomato mixture.
  8. 8
    Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).

    Serve immediately.

    The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

    I love this bruschetta!! I sliced a baguette into 1/2 inch little rounds and served up as an appetizer for a party, it was a hit!! The smaller slices are a bit more time consuming because I did toast an rubbed down w/garlic as directed but way worth the effort for the perfect bite sized appetizers thank you!!

    This is very good. I brushed the bread w/olive oil and sprinkled it lightly with garlic powder (instead of rubbing it with the cloves) before broiling. I also added a teaspoon of sugar to the tomato mixture to cut the acidity. Have made this about 4 times now. My husband just loves it!

    Nice and easy! This has great flavor, and eye appeal. It was easy to put together and bake. I followed your directions and did not alter anything in the recipe. A nice variety of flavors and textures. Thanks for sharing this recipe. I will be using this one again!
