Tomato-Vodka Soup

Invariably, everything I cook has alcohol as an ingredient. Why not?

    In a skillet, saute onions and garlic in olive oil and butter over medium high heat for 1 minute In a slow cooker, add vegetable broth, tomatoes, tomato sauce, vodka, salt and sugar. Then add the sauteed onions and garlic. Cover and cook on high heat for 5 hours.

    Puree the soup in batches, then stir in half-and-half.
  3. 3
    Cover and cook for an addition 20 minute on low heat setting.

We are big fans of tomato soup ( and grilled cheese sandwiches!) and this recipe fit perfectly. I did make some minor changes to cut back on the calories and fat. Instead of butter and oil, I used Smart Balance Light. I also used Land o' Lakes Fat Free Half & Half. I also cooked the soup on the stove top as I was short on time. However, the results were splendid and this recipe will definitely become a regular at our table. The soup is 2 points on WW. Thanks for posting!
