Got this from an old Southern Living Cookbook. Used fresh tomatoes and cucumbers. This made a great summer evening salad. Very refreshing.

SERVES 4 -6 (change servings and units)

Directions

  1. 1
    Combine the first 5 ingredients, and toss gently.
  2. 2
    Combine remaining ingredients; mix well, and pour over vegetables. Cover salad and chill 4 to 6 hours.

We really enjoyed this recipe. I did use red wine vinegar, reduced water to 2 tablespoons, and added croutons. Very nice. I served your salad with grilled chicken. Thanks for Posting, Di

    I didn't read the other reviews before making this and used the full amount of water. The salad was very tasty, but I think a lesser amount of water would have been good too.

    After reading the other reviews, I just used a touch of water, quartered the recipe, and didn't have tarragon vinegar so used red wine vinegar and added some crumbled tarragon. Thanks Jim! Made for ZWT5.

    A very nice salad with slightly different ingredients. I cut the water back to half, next time I think I will skip it entirely as it watered it down a little. Hubby had the leftovers for lunch and said it was even better the second time around. Made for ZWT5.
