Tomato Open Sandwiches with Peanut Butter

The perfect, quick, bachelor-y lunch for when you're hard pressed for time! This healthy recipe includes the 4 main food groups, so tuck in, and double the recipe if you're really hungry!

SERVES 1 (change servings and units)

    Wash the spinach leaves, shake off excess water, place in a microwave-proof bowl, and microwave on high for 30 seconds or until just wilted.

    Alternatively, you can omit this step and just have it raw, or use lettuce leaves.
  3. 3
    Spread the peanut butter evenly over the bread slices.
  4. 4
    Place 1-2 wilted spinach leaves (or lettuce) over each slice, and top with tomato slices.
  5. 5
    Sprinkle with salt and pepper.
  6. 6
    Toast on a grilling rack in the oven (300C) for 5-7 minutes or until the bottom of the bread is slightly brown.

    Eat immediately, with fresh fruit for a healthy lunch!

    The combination of flavors is surprisingly really very delicious how they compliment each other. Two teaspoons of peanut butter barely covered the bread, so I had to add a little more. If calories were no object, slathered with peanut butter would be even better.

    I am seeing stars! I love this... I love homegrown tomatoes on toast with a million things to begin with and now this...you have made me sing though I still can't whistle after eating this...but it will make you dance and ask for seconds!!!

    I'm gonna gain 100 pounds! This was lunch yesterday and breakfast today. Good way to use up all the home grown tomatoes I have.
