Tomato-Basil Mahi Mahi

Mined this off the web and made my own version of it for dinner. I had some frozen mahi mahi from Tader Joe's and it was so perfect with the tomato basil sauce! Do not sub the sauce--or if you do, consider adding some of the below ingredients, like fish sauce. The sauce is a little sweet and goes especially well with seafood. This is also really, really easy--good weeknight meal.

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    Coat pan with cooking oil and pan fry Mahi Mahi fillets until golden brown.

    To prepare sauce, saute garlic and shallots in pan.
  3. 3
    Add onion, tomato paste and chopped tomatoes, fish sauce, vinegar or lemon juice and sugar.

    Stir in chicken stock and simmer until sauce thickens.
  5. 5
    Remove from heat and add basil.
  6. 6
    To Serve, top Mahi Mahi fillets with generous helping of tomato basil sauce.

    (Vegetarian option: Substitute Mahi Mahi fillets with deep fried tofu and use vegetable stock in the sauce.) You can also substitute any mild white flesh fish instead of Mahi if you can't get it in your area.

    Garnish with a pretty whole basil leaf or bunch of leaves.

I made this on mahi we caught in Key West. I think the topping was acceptable, but seemed a bit too Italian for our mahi tastes.

    Great recipe. We were concerned that the amount of garlic called for would be overpowering, but it wasn't at all! skipped the sugar, used lemon and soy. Terrific flavor all around. Thanks! Andiamo

    I left out the chicken stock, added 2 tbsp of rice vinegar instead of one, and fried the mahi in sesame oil. The dish was a hit. Thanks for the recipe!

    Good meal-in-one entree. Add a salad and dinner's complete. The sauce was pleasantly sweet. I'd skip the 1T of sugar next time. I used a 28oz can of diced tomatoes but I think the finished sauce would be greatly improved by using garden fresh tomatoes rather than canned. The directions fail to mention when to add the dice tomatoes so I assumed they were meant to be added along with the tomato paste, fish sauce, etc.
