This drink dates back to the mid-nineteenth century and it is disputed whether it originated in England, America, or Australia. It was originally made with Old Tom, a sweetened gin. The modern version is made with dry gin. A French 75 is a Collins made with cognac and champagne.

    Mix the first 3 ingredients in a chilled glass; stir.

    Add 3-4 ice cubes; top with club soda, stirring gently.

    Garnish with lemon slice and cherry.
