Tims' Mom's Blueberry Muffins

My son is a chef in Louisville, and he loans this recipe to his friends this is the title they give it! The second best part about these muffins(the best part is eating them) is going to the blueberry farm and picking your own blueberries! Its great fun and the kids love it!

SERVES 12 , 12 muffins (change servings and units)

Ingredients

Directions

    Cut butter into flour,sugar,baking powder and salt.
  2. 2
    (like you do for pie crust) Add egg,lemon,milk vegetable oil and vanilla, stir just til moist fold in blueberries.
  3. 3
    Bake in well-greased muffin tin at 400 degrees for 20 to 25 minutes.

    muffin cups will be about 2/3 full.

This is a good easy recipe for a delicious muffin! My Granddaugher made a batch last night and we all scarfed them up for breakfast. Thanks so much for sharing, Virginia, we will use this recipe again!

    I followed the directions but found it turned out more like a dough and not a batter. I ended up adding about another 1/2 cup milk to make it pliable for spooning into the tin. I may try it again but likely will search for other recipes. Thanks anyway!!
