Tilapia is a healthy, lowfat, mild flavored fish, This recipe is another way to fix and enjoy Tilapia.

SERVES 4 -6 (change servings and units)

Directions

    Place fillets skin side down in single layer in a greased shallow baking dish.

    Mix together remaining ingredients; spoon over fillets.

    Bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.

Just made this recipe tonight for dinner! It was very good. My husband, who's a fish lover, called it "Excellent!" I seasoned the fish with salt and pepper before I put the topping on and I added lemon zest to the mixture. Would absolutely make this again! Very tasty!!

    Recipe was great - although I used the topping amounts on only 2 filets. The onions and tomatoes covered them and made for a beaufitul presentation. Next time, I think I will use some lime zest to brighten it even more. I really like intense flavors.

    Good. I enjoyed the fresh bursts of colorful veggies in this -especially the olives, which really shone in this dish. However, while the sauce was tasty, the flavors didn't quite seem to enhance the fish. I think perhaps marinating the fish first, or pwerhaps seasoning the fish fillets directly with some more of the seasonings would have helped enhance the flavor a bit more. Mine needed 25 minutes cook time.
