Thick Chocolate Pudding

This is the perfect chocolate pudding. It has a rich chocolate flavor, great texture and is not high in fat. I can't count the number of times I have made this. I hope you enjoy it as much as we do.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a 2-qt. microwave-safe bowl, combine the first four ingredients.

    Stir in milk until smooth.
  3. 3
    Microwave, uncovered on high for 3 minutes; stir.
  4. 4
    Microwave 4-6 minutes longer or until thickened, stirring after each minute.
  5. 5
    Stir in vanilla.

    Pour into individual serving dishes; cool.
  7. 7
    Refrigerate.

    Garnish with whipped topping if desired.

My husband and I really enjoyed this. Because he is a diabetic, I made it with Splenda. This doubles nicely. I added 1/4 c. choc. chips as I always do with the packaged mixes. I will not be buying them anymore now thanks to your wonderful recipe! Thanks so much! BTW, I made this on top of the stove by first sifting dry ingredients into the pan, then slowly adding milk to make a smooth paste before adding all the milk. I brought it to a boil and then removed it from the heat after 30 seconds or so.

    I wasn't as impressed with this as everyeone else seems to be...I thought the texture was great, but I wasn't a big fan of the flavor...I'm not sure what it was, but maybe I' m just so used to the instant stuff (with all the sugar) it has ruined me for other chocolate pudding! It was easy though, and was good with cool whip.

    Yummy! I subbed Splenda for the sugar and it worked fine. Be sure to watch while in the microwave (mine overflowed EVERYWHERE).

    Excellent pudding. I often make it with soymilk instead of regular milk, and Sucanat (organic brown sugar) instead of the white. An popular variation is to replace the vanilla with mint extract.
