The Ultimate Greek Salad

This is the most delicious salad - fresh and wonderful-tasting.

SERVES 6 (change servings and units)

Ingredients

Dressing

Salad

  • 1 head lettuce, torn into bite-size pieces ((I use Romaine)
  • 3 large plum tomatoes, seeded and coarsely chopped
  • 1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
  • 1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
  • 1 small green pepper, cut into thin rings
  • 3/4 cup kalamata olive
  • 3/4 cup crumbled feta cheese

Directions

    Whisk dressing ingredients together until blended.

    Season to taste.

    Drain onion from ice water and pat dry with paper towels.

    Combine all salad ingredients, except cheese, in large bowl.

    Toss with dressing.

    Sprinkle cheese over and serve.

I followed the recipe as written - it was excellent. My husband and I loved it. We ate at a local Greek restaurant a few weeks later and thought this recipe was 5x better than the one at the restaurant. I made this salad just the other night, but used a different red wine vinegar. I ended up having to add 1/2 tsp of sugar. The first time I used Pompeian red wine vinegar and it was perfect. The second time I used something else and found the brand made a huge difference. I will only use Pompeian red wine vinegar from now on with this salad.

    As I was only feeding 4, I cut the dressing in half and did not use the lettuce. My DD loves feta so much, she added more to her plate. Even though the salad did not sit for any length of time, the flavor was still enjoyable. I would definately do this one again!! Thanks, Evelyn for sharing!

    I made this for a girl's night tea party I held at my home. It was very good. The only thing I did different is to add a little salt to the dressing. My friend's loved it! Great recipe!

    Terrific salad! I must confess that I didn't have any kalamatas on hand (is that a prosecutable offense in Greece??) but I followed the rest of this to a T. Loved the dressing--quite tart but really nice Will be having this again!
