The South Beach Diet Cheesecake

Not bad for a diet cheesecake. Satisfies that sweet tooth. Phase 2 on The South Beach Diet. The 20 minutes prep times includes the 15 minutes cool-down phase before adding the sour cream topping.

SERVES 6 (change servings and units)

Directions

    Beat ingredients for'cake' until smooth.

    Pour into a 9" greased square pan.
  3. 3
    Bake at 350 degrees for 35 minutes.

    Remove from oven for 15 minutes-- leave oven on.

    Meanwhile-- mix topping ingredients together and mix well.
  6. 6
    After the 15 minutes has elapsed, pour topping over the cheesecake and spread evenly, and bake for 10 minutes more.

    Chill.

I'm not sure why this was found bland I found it incredibly sweet! It was truly delicious. The best SB dessert I've tried by a landslide. It was SO nice to enjoy what tasted like a REAL dessert! I will be having this even if I come off of SB. The cake part was great and the top was creamy and delicious, couldn't recommend it more!

    My husband and I found this to be very pasty and flavorless - even when topped with sugar-free cherry topping. Just too blah. Won't make again.

    Really easy and good flavor --did find the topping was a little too much — next time would used 8 oz. of sour cream as I think it would be plenty --and there will be a next time! Thanx for the nice recipe.

    My DH is in his second week of Phase 2 and nearly cried when he took his first bite. I topped it with some frozen berries popped in the microwave for a minute with some Equal. He said "You can make this ANYTIME you want." and declared "Finally, this is what I needed, some food with flavor!" Thank you for a great recipe!!
