Fried Ham Sandwich

I was in the nursing profession many years ago. When we were allowed to take a lunch break, I would go to the hospital cafeteria and order up one of these sandwiches. Of course, the cafeteria chefs had a "seasoned grill" that showed years and years of delectable delights. They even had special spatulas that you could easily imagine the pounding and flipping going on in the air, as somehow this made the food taste even more spectacular. To this day I still make these at home, occasionally for lunch or a quick dinner. After the cafeteria chefs put this yummy sandwich together they would wrap it in (1) wax paper (2) then aluminin foil. By the time you got to your table, the tastes had developed and probably steamed in the combination of wax paper and foil. Either way, I guess these magical chefs will never be forgotten as this made my day complete, every single day. I hope you enjoy this sandwich as much as I. Try the wax paper and foil too, if you have time.....you will see what I'm talking about.

SERVES 2 (change servings and units)

Ingredients

  • 4 slices bread (suggested country white-any will do)
  • 2 ounces lean deli ham (sliced in slivers)
  • 1 small onion, sliced very thinly
  • 1 tablespoon mayonnaise (can be reduced fat)
  • 1/2 teaspoon butter (or margarine) (optional)

Directions

  1. 1
    Spray skillet with cooking spray. If using optional butter, melt this in pan until completely melted.
  2. 2
    Toss in onion and cook until translucent. (about 2/3 minutes).
  3. 3
    Add ham on top of onion, and continue to warm on medium heat for 3/4 minutes.

    Flip over ham/onion and continue to warm for 2 more minutes.

    Spread bread with mayonnaise add warmed ham/onion mixture.
  6. 6
    Press down tops of bread, and kinda "smash" together.
  7. 7
    Cut in half and devour.

This was a perfect complimet to our potato soup last night, warm and comforting. The onions are amazing, and I took the time to steam mine in the wax paper and the tin foil — wrapped it all up and then let it sit in an oven that had been at 350F and was turned off for about 10 minutes while I finished up the soup. It was perfect! Thanks for posting Andi! I loved this and will make again many many many times! Made for THINK PINK event October 2009!

    Andi, this was love at first bite. Had a big storm that blew through and knocked out the power (electrical only still had gas). Remembering this tag and what you had written about wrapping them in wax paper and foil, I set about making us a light supper while there was still had some day light left to cook with. Had to make on whole wheat rolls as that is what we had on hand. The wrapping in wax paper and foil steamed the rolls to perfection. The fried onions and ham just sent our taste buds straight to heaven, or should I say yummy to the tenth degree. Thanks for a fantastic post and for such a very comforting meal in the middle of a storm.

    Oh my goodness - I would have signed up to be a nurse if I thought I could get one of these little gems in the nurse's canteen on a daily basis! This is a prime example of simple is often best! I did not do the greaseproof paper and tinfoil thing this time, but I think that would be great if you made them up a little bit before serving and then kept them warm for a while. We both thought that the idea of onions freid with the ham was brilliant - I used lovely "Bridge" rolls for these sandwiches, and we had one and half each!!! Another Classic from the farm that goes into my "Great Snack Attack" recipe file!! Merci Andi for the story of your nursing dasy as much as the canteed style sandwich - just wonderful! FT made for Ms Twissis's PRMR game for Andi.

    Remarkably delicious for such a simple recipe. The recipe scaled up nicely to 2 large onions and 8 oz of ham. Next time I will brown the ham and onions more aggressively. Another time, I will use regular, leftover ham, pile it on hoagie rolls, top it with shredded mozzarella or provolone, wrap it in foil, and bake it in the oven long enough to melt the cheese — but I suppose that's a different sandwich altogether. :D LOL
