These waffles are super crisp on the outside and light as a feather inside and so scrumptious! Avoid removing them from the waffle iron too soon; they should be a golden brown. Enjoy!

    Sift the dry ingredients together in a large bowl.

    Separate the eggs.

    In small bowl, beat egg whites until stiff.

    Mix together the egg yolks, milk and oil and stir slightly.

    Add to dry ingredients and mix well.

    Fold in beaten egg whites.

    Very good waffle recipe! THANK YOU! Only takes a minute to whip up the egg whites so I did'nt consider that to be a time consuming addition to the recipe. I think that's the key to these being so light & fluffy. We made some plain & for the rest, we chopped up cooked bacon & added to the batter. One problem I ran into, not with the recipe, but with my waffle maker, I did'nt have a manual & could'nt find one online, spent more time just finding a recipe/site that would just give me some idea of how much batter to use & how long to cook! Finally tried trial & error & will put here for anyone else who needs an estimate or starting point. My belgian waffle maker is a magic chef model tsk-240b & I used between 3/4 & 1 cup batter & cook time was 3 minutes. Made 6 waffles. Hope that helps.

    I made a complete pig of myself last night with these waffles! I have NEVER had such amazing waffles. I didn't even want to ruin them with syrup and butter! DH didn't have this same problem (chuckle) and loved filling those pockets with lots of both! Made 16- 4"x4" deep belgian waffles. I took your suggestion, Marie and left the waffles in a good long time..till the outsides were a deep brown (more than golden brown). For my waffle maker (Villaware Uno Belgian 6 waffle maker) that was about 5 minutes per batch plus 1 minute to preheat the griddle before pouring again so keeping the other waffles warm in the oven was important. Not to worry, the waffles in the oven remained crispy on the outside and soft on the inside..and the fresh ones were absolutely fantastic. The flavor of these plain reminded me of funnel cakes at the fair. Incredible and really, we could not stop eating them. A note about pouring..the batter puffs up because of the baking powder so you will probably need a spatula or spoon to help you spread the batter around the griddle so you get it in all the squares. And, if you have never made waffles before, just get the batter level with the recessed area for the batter. Ridiculously good. Oh yeah, this is SO going in my tried and true cookbook. I bet this would make fab pancakes too! I KNOW it would make good copycat McGriddle cakes (same flavor) using a egg poacher ring, maybe to get the height? Hmmmm....Thanks for sharing such a gem, Marie.

    I woke up early this morning to make my family some waffles with my new Belgian Waffle Maker. I've used this maker about a dozen times and have been extremely happy with the results. I first made a commercial mix and was ready to throw my new iron out the window when it stuck so badly I had to scrape it off the iron. I then decided to try a new recipe and found this one. The results were amazing. None of the waffles stuck and they were light and crispy. I have an extra deep belgian waffle maker, so this recipe only made 6 waffles, but still enough for my family of four. I also made extra to freeze for my daughters during the week. I just separate them in halves then pop them in my toaster for a couple of minutes and they're much better than store bought frozen waffles. Thanks for a great recipe that I will be using from now on. No more commercial mixes.
