Light and tasty!!! Easy to make. Prepared the recipe as directed, but did add a bit of vanilla. My "Picky Panel of Judges" gave it 5 stars! Definitely a keeper.

I have made these waffles about 20 times now and boy are they great and my family loves them. My boys can't get enough of them. I have felt badly about not having added my review previously and here it is with suggestions for making these waffles superbly. I use three egg whites and put the whites in a mini chopper until they are whipped stiff. If you skip the egg whites part, you are missing the entire point. The egg whites make this fluffy and incredible. The additional white only makes them a little lighter and even more airier, so if that is not a concern, use the two stated or experiment with what you prefer. I still only use the two yolks as stated. Also, I add some cinnamon to the mix and it is very aromatic and yummy. Also, my husband likes them with some chopped walnuts, so I chop them up and after placing the batter in to the waffle iron, I throw in some chopped nuts and then close the lid. If your nuts are not chopped well, your lid will not close as it should. We made these this morning with eggs and bacon and it is a feast. We will be making these Christmas morning as well. Thanks so much. Susan
