Kittencal's Creamy White Buttercream Frosting/Icing

This is similar to bakery frosting and so much better than any canned! to yield more frosting increase the butter and shortening to 1/2 cup and increase the confectioners sugar as needed --- for extra fluffy frosting make certain to beat for at least 3-5 minutes and remember to sift the confectioners sugar before using.

2 cups (approx) (change servings and units)

Ingredients

  • 1/3 cup white Crisco shortening, softened
  • 1/3 cup butter, softened (or use hard margarine)
  • 4-6 tablespoons 35% cream, unwhipped (or use half and half cream or milk)
  • 1 pinch salt (almost 1/8 teaspoon)
  • 1 1/2 teaspoons vanilla (or can use 1 teaspoon almond extract)
  • 3 1/2 cups confectioners' sugar, sifted (or as needed)
  • 2-4 drops food coloring (or as needed, you may omit if desired)

Directions

    In a large bowl using an electric mixer at medium speed beat together the shortening or butter with whipping cream or milk, salt and vanilla until smooth (about 3 minutes).

    Add in sifted confectioners sugar starting with 2-1/2 cups; beat very well until smooth and fluffy, adding more confectioners sugar or cream or milk until you achieve desired consistency.

    Add in the food coloring (if using) until the desired shade is achieved.

ok so i am finally giving my 2 cents, not as though this needs any more wonderful reviews, but I have made this countless times and have found a few helpful tips...During the 1st step of combining I found that if I combined the ingredients as listed while i mix with my mixer it splatters, and I mean splatters! So i combined crisco and marg, then the other ingredients with 1 cup of the p suger. I find that this helps keep the mess down...But the mess is definately worth it!!!! This pipes wonderfully! and holds int he fridge for a week wonderfully.

    I will never buy icing again! This recipe turned out perfect. I must admit Ms. Kittencal that when looking for a recipe {for anything anymore} I check to see if you have anything posted....Thanks again for a great recipe. Today was my daughter's 13th birthday and I wanted the cake to be special and the cake with this icing really TOPPED off her birthday celebration. Saderbee

    A very good, creamy, basic buttercream. Piped onto cupcakes perfectly and held the shape. Tasted good and came together easily. I added a little extra vanilla....personal preference. I enjoy a very strong vanilla flavor. What is great about this recipe is that it is so simple and basic you can do anything to it. Add a little almond or lemon extra....beat in some melted chocolate. Whatever will work. GOOD STUFF!

    Very light. I didn't use all the icing sugar. It seemed that about 2 1/2 cups was enough. Although I tend to like my icing thinner. I also didn't have whipping cream so I used half and half, but it worked just fine. Will definitely use this again.
