The Best Chicken Tortilla Soup

I'm in love with this soup!! A very good friend of mine made this for me recently and I fell in love. I'm very picky about my Tortilla Soup and this by far the best ever. She makes hers in the crock pot and I have to agree, that it's easy and tastes just wonderful!! Whatever you do, DO NOT skip the garnishes! They are the icing on the cake!

SERVES 6 (change servings and units)

    Throw everything except the garnishes in your crock pot and let it cook on high for 5-6 hours.

    Dress with garnishes and give it a squeeze of lime (a must:-) and you're good to go!

    Enjoy!

    If you are not using a crock pot, saute the garlic and onion in 2 tablespoons olive oil before adding the remaining ingredients.

    Simmer for at least an hour so that the flavors mix together.

I must be weird for not giving it five stars like everyone else, but I wasn't terribly impressed. I guess I'm looking for a more authentic recipe, or one that matches two seperate batches I had in Mexico and Cali that were just divine. This was just okay.

    Wow!! This was amazing! I used my crockpot and put everything in it and then put frozen chicken breasts in and cooked on low for 8 hours. I used the chipote chili pepper and that was a success! This is my chicken tortilla soup recipe from here on out. Don't forget the cheese, tortilla chips, and avocados to top it off to excellence!

    I have tried many soup recipe’s and they are almost always too bland. I’m sure my hubby was thinking he was going to have to suffer through another soup trial. Amazingly the first thing out of his mouth was MMMMMMM!! I agree this is YUMMY- thanks!
