The BEST Spinach Salad

Recipe #61591 | 8 min | 3 min prep | add private note

By: Mary Anne
May 7, 2003

My mom got this recipe from a friend, and it has quickly become a family favorite. Delicious!

SERVES 4 -6 (change servings and units)

Ingredients

  • 3 tablespoons butter
  • 1 package ramen noodles
  • 1/4 cup slivered almond or sliced almonds
  • 2-3 bags baby spinach

Dressing

Directions

  1. 1
Saute in the butter, until lite brown, the package of ramen noodles (crumbled) and the slivered OR sliced almonds.
  2. 2
These are the"crispies" and will keep in a baggie in the freezer if you have any leftover.
  3. 3
Combine all the dressing ingredients in jar and shake to mix.
  4. 4
This makes enough salad for 2-3 bags of baby spinach or baby romaine or spring greens, your choice.
  5. 5
Toss the salad with some crispies and dressing right before serving.
  6. 6
Works well to serve with tongs.
  7. 7
Add optional sliced green onions if you wish.

Yum! I didn't have any almonds but I did have some chopped up cahews, and they worked great. I cut back a little on the oil since I wanted more tang and added orange pieces. I am bringing it to my in-laws so I'll find out how it goes over with a group...but I loved sampling it as I made it!

Oh, wow, this was delicious! I had a bag of spinach that needed to be used up and I'm not normally a fan of spinach salads so I was sort of dreading having to eat it so it wouldn't go to waste. I left out the almonds simply because I didn't have any, but everything else was the same. I may just start eating spinach more often now!

The buttery little crunchies are so good and really make this wonderful salad. The dressing is simple but very tasty, a bit of soy sauce adds just the right touch. This would be very easy to customize as well, maybe some mandarin oranges, purple onion, sliced egg, bacon, or chicken for variety but perfect as is. We'll be having this often at my house. Thanks, Mary Anne!

This has fast become a family favorite! Took it to a family gathering and had to give the recipe to 3 people. A year later I am editing this to add it is still as popular as ever! I like to add green onion and/or bacon sometimes. I will be making this for years to come as it requested a LOT!
