Thai Grilled Chicken Thighs

This is my first recipe - please be kind! My kids love it and when I take it to a BBQ everyone wants the recipe. It is a variation on one I found in epicurious a while ago. It is very easy and very yummy!!

SERVES 4 (change servings and units)

Directions

    Combine all ingredients except chicken in a bowl.

    Mix thoroughly.
  3. 3
    Add chicken and leave to marinate at least one hour, preferably longer.
  4. 4
    Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.

    Ususlly you would expect 12 thigh fillets to feed 4 to 6 people- in my family the kids eat 4 each so this recipe serves 3.

Very flavorful chicken! Would not change a thing. I did made some shallow slits in the chicken so the marinate would seep into the meat. I used the same marinate on sliced eggplant and grilled that with my chicken. Along with some rice, it made a great meal. Will definitely make again. Thanks!

    My husband and I loved this, it was fabulous. The flavours were there and the heat was there. We had it as a main dish. Would also be great as an appetizer with the chicken sliced in thin strips and slipped onto bamboo skewers and bbq'd. Deliscious recipe all around. Thanks for sharing !!

    This was a fantastic marinade! I used crushed chili flakes for the kick and it was delicious. The only alteration I did was to add a clove of crushed garlic instead of the minces. It still had a great garlic flavor without aggravating my intolerance for it. Will definately be making this one again and again.... Thank you!

    Patch63, You can remove (please be kind) from the discription of this recipe! A nice first! I DID USED SKINLESS BUT THE CHICKEN DID HAVE BONES. I used frozen basil and had to put the cilantro on my pieces of cooked chicken. DH doesn`t like cilantro and I love it. Marinated over night. I did grill the chicken on lightly oiled foil. Grill on high 5 minutes turned and reduced the heat to low very low! For 40 minutes. The chicken was not over direct fire. It came out very tender. My DH had no idea what it was marinated in. First words out of his mouth was OHHHH AHMMMMMMMM this is good! Well between 3 of us it`s all GONE! Thanks for posting!
