Teriyaki Scallops

These are so good. Easy to make and well worth it.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine soy sauce, rice wine, sake (or dry sherry) and sugar in medium bowl and stir until sugar is dissolved.

    Add scallops and let stand for 30 minutes, turning occasionally.

    Meanwhile, bring 2 1/2 cups water and salt to a boil in medium saucepan over high heat.

    Add asparagus.
  5. 5
    Reduce heat to medium-high.
  6. 6
    Cook 3 to 5 minutes or until crisp-tender.
  7. 7
    Drain asparagus and keep warm.
  8. 8
    Drain scallops, reserving marinade.

    Preheat broiler.
  10. 10
    Line broiler pan with foil.

    Brush broiler rack with vegetable oil.

    Place scallops on rack.

    Brush lightly with marinade.

    Broil about 4 inches from heat source 4-5 minutes or until brown.

    Turn scallops with tongs and brush lightly with marinade.

    Broil 4 to 5 minutes or just until scallops are opaque in center.

    Serve immediately with asparagus.

    Garnish as desired.

I'm famous for coming home with something random and giving it to Tom who looks at me with a "now what" look on his face. This was one of those times. Our grocery store had these giant scallops that were calling me. "Now what" was this recipe this time. This was fabulous and was made for ZWT

    These were really good. I had never used sherry before and it was a bit strong for my liking. I would add a bit less next time but these were really good and will be making again. Hubby said he wishes I would have made more!

    This marinade is great. I had little scallops and no asparagus, so I just sauteed the scallops in the sauce. Really easy and tasty. Thanks Nimz. We enjoyed this one.

    The teriyaki marinade is very good with these. I had small bay scallops and just sauteed them in a pan with the juices. Left out the asparagus and served over rice. Marinade would work well chicken and beef as well.
