Teacher Coffee Cake

Our first grade teacher, Mrs Bridgewater, who had retired twice, would be excused from teacher's meetings to make this recipe. This recipe lives on in many households.

SERVES 12 (change servings and units)

Ingredients

Streusel Mix

Directions

    Mix first five ingredients.
  2. 2
    Stir in flour and baking powder.
  3. 3
    Prepare streusel mix.
  4. 4
    Spread 1/2 batter into 9" cake pan. Sprinkle 1/2 streusel over batter.
  5. 5
    Repeat with rest of batter and mix.
  6. 6
    Bake 375° for 25-30 minutes.

    Get back to school ASAP!

    A delicious coffee cake and easy to make. Since the directions for mixing weren't specific, I creamed the softened butter with the sugar, then beat in the egg and salt. I mixed the baking powder with the flour and stirred that in. I did add several smallish apples diced to the batter. For the streusel, I used brown sugar and increased it to 3/4 cup and doubled the flour and butter. (I really like streusel). The texture is perfect. I got raves from everybody! Thanks for the recipe!!

    Yes, a definite 5 stars! I used to work with a catering company that made coffee cakes for our hospital meetings. I never thought anything could come close to theirs. This was so perfect! It wasn't too sweet or too cakey... but perfect. Thank you!
