Taco Soup

This is a delicious and quick soup (even if you are not on Weight Watchers). One cup of soup has 2 points, and recipe makes 12 cups.

SERVES 12 (change servings and units)

    Brown meat and onions and drain.

    Mix ranch dressing and taco seasoning into meat.

    Without draining, add all of the other ingredients.

    Simmer 1 hour.

This was delicious, and so easy to make. All I had in the cupboard were black beans and it turn out great. thanks

    I used the ground beef and regular chili beans. I used white corn and just petite diced tomatoes as I didn't have any mexican tomatoes. This has great flavor but I thought it was too thick. I added a cup of water and we thought it was a lot better. I topped mine with cheddar cheese. The leftovers heated up nicely. I also put some in the freezer for future lunches.

    Great recipe! My husband had two bowels and then ate the leftovers the next day...and he's not even on a diet! A few things I did differently: I added about a tbsp of fresh cilantro, a 1/4 cup of diced green onion, a dollop of sour cream in the dished out bowl, and baked some taco shells, broken, to sprinkle on top of the soup. Great meal!!

    Very very good. I used Boca ground burger instead of meat and added some extra spices for heat. It was excellent. It was especially good as leftovers, when everything kinda soaked in. Yum!
