Taco Soup

Simple comfort food to cook in the crock pot all day and come home to a great meal. This recipe is from my dad's cousin Virginia. This is a lot of soup, but freezes well.

SERVES 8 -9 (change servings and units)

Ingredients

    Cook ground beef, garlic& onion until tender.
  2. 2
    Drain fat.
  3. 3
    In large crock pot add remaining ingredients, including all the liquid from each can.
  4. 4
    Cook as long as possible, the longer, the better.
  5. 5
    Serve in bowls with corn chips or nachos and any topping desired, such as sour cream, shredded cheese, chopped lettuce or tomato.

I made this soup last night, and my fiance and I both raved about it and brought left-overs for lunch today!! I did make a few changes though...used tomato sauce in place of diced tomatoes, and ground chicken in place of beef because I LOVE chicken tacos. It turned out amazing!! Thanks for the recipe, will use this many times throughout the winter months!

    This soup was wonderful... Made some changes because everyone in the family is not a big bean fan . I only used 1 large can of pinto beans & used corn instead of hominy. I also added a little extra water. Everyone loved it! My DH who usually doesn't like this raved about it, as well as all of my kids. WIll definitely make again.

    I love finding recipes that are not only delicious, but easy to make. I did not have a can of hominy so I just eliminated that ingredient. I topped the soup off with corn chips and sour cream. This really hit the spot!

    Very tasty, and very easy. The only thing I changed was to add more garlic. We served margaritas with this. The aroma in the house was fantastic.
