Taco Salad

This is a big hit at BBQ's and potlucks. It is great since noone often brings a salad like this so you dont have to worry about having a duplicate recipe. Also great for a hot weather family meal. Everyone loves it. For vegetarians you can easily omit the meat and mix in a can of black beans instead.

1 large salad bowl (change servings and units)

Ingredients

  • 1 lb browned ground beef
  • 1 head shredded lettuce
  • 1 can drained kidney bean
  • 2 large diced tomatoes
  • 1 can sliced black olives, drained
  • 1 1/2 cups shredded cheddar cheese
  • 1 medium finely chopped onion
  • 1/2 bag of crushed tortillas chips or plain Doritos
  • 3/4-1 bottle French dressing or Catalina dressing or thousand island dressing (I like Catalina the best)

Directions

  1. 1
    Mix all ingredients together except tortilla chips and chill, mix in chips just before serving.

My son and I liked this salad, but my daughter said it was too sweet. I made it a day ahead (except the chips) and it was a bit watery. I misread the ingredients and thought it said 3/4-1 cup of dressing (not bottle) which is about how much I had left. I made Sweet French Dressing for the rest. It does say "sweet" but I didn't think it was any sweeter than the bottled stuff. I used "original" Doritos (the cheese ones). I think "plain" Doritos are just a brand of tortilla chips and are not available on the east coast of US, AFAIK. I used a head of green leaf lettuce and chopped it rather than shredding.

    A great salad, easy to put together, I did however use a package of taco seasoning mix in the ground beef. And used green onions. I have made this several times already. Thanks for sharing.

    This made a great salad and everyone at the potluck I took it too really enjoyed it. I did make a few changes. I discovered I didn't have any black or kidney beans so I used garbanzo. I didn't have any black olives so I used green. But it still turned out great! Thanks so much, I will definately make this again!
