This recipe was given to me by my daughter-in-law when she lived on a Navy base in Seattle. It reheats well and the guys just love it!

SERVES 4 -6 (change servings and units)

    In a large skillet brown the beef, green pepper and onion over medium heat until onions and peppers are soft and meat is no longer pink. Add water and taco seasoning and bring to a boil. Reduce heat and simmer for 5 minutes. stir in tomatoes and black beans (rinsed and drained). Simmer for 10 minutes.

    Use a greased 9 x 13 pan. Put 2 tortillas on the bottom overlapping as necessary. Spread with half of the refried beans, then half of the meat mixture and 1 cup of cheese. Repeat layers starting with tortilla shells. Top with remaining tortilla shells and cheese. Cover with foil and bake for 30 minutes at 350 or until cheese is melted . Garnish with fresh cilantro if desired and top with sour cream.

Delicious!!! Thank you for an easy recipe. I didn't have black beans, but it was great without them. I also left out onions because my husband is allergic to them. I cooked this earlier today, then put it in the refrigerator until dinner time, sliced it up, and reheated individual servings (easier to get out that way)

    This is a great recipe, and my kids loved it. I just have one comment - the nutrition facts say this is only 4 servings and 62 fat grams per serving. This fills up a 9 X 13 pan, and would easily serve 8 or more. I compared it to other similar recipes and the fat grams are between 23 - 33 fat grams, which makes more sense.

    Made for PAC Fall 2007 This is a wonderful recipe! I heated the refried beans a bit in the microwave so they would be easier to spread on the tortillas. I made this for lunch while we were watching the football game and it was a hit. We fed 6 people and each person had a large serving. Thanks for sharing, I will definitely make this again.     Great recipe! We loved it and will save it for many future dinners! Makes a large amount, but leftovers heat up really well.
