Taco Bell Mexican Pizza - Copycat

A friend gave me this recipe and it was an immediate hit with our family and friends.

SERVES 4 (change servings and units)

Ingredients

    Cook the ground beef over medium heat until brown, then drain.

    Return meat to pan and add the salt, onions, paprika, chili powder and water.
  3. 3
    Let mixture simmer over medium heat for 10 minutes, stirring often.
  4. 4
    Heat oil in frying pan over medium-high heat.
  5. 5
    When oil is hot, fry each tortilla for about 30-45 seconds per side and drain on paper towels.

    Be sure to pop any bubbles that form when frying so that the tortilla lays flat in the oil.

    Tortillas should become golden brown.

    Heat refried beans.
  9. 9
    Preheat oven to 400 degrees F.

    Stack each pizza by first spreading 1/3 C beans on one tortilla.

    Next add 1/3 C meat, then another tortilla.

    Top the second tortilla with 2 T of salsa.

    Divide the tomato, cheese, onions and olives evenly and top in that order.

    Bake for 8-12 minutes.

This recipe saved my life. I was pregnant and living overseas where they gasp do not have Taco Bell!!! Naturally since I couldn't get it anywhere in that or any of the surrounding countries - that's what I was craving most. This recipe is so close to the real thing it exactly hit the spot and kept me from creating an international incident. Thanks for posting!

    A fun little recipe. I think a cup of cooking oil is a lot more than required. The family enjoyed this.

    Wonderful! I sprayed my tortillas with cooking spray (both sides) and baked until crisp rather than frying them~ a little less grease/ fat that way! I used fat-free refried beans, and I also used taco seasoning based on other reviews. I'll definitely be making this one again.

    This recipe tasted great! It was easy to make. I added taco seasoning, (approx. 1/4 pkg.) instead of the recipe's spices. I will make this again. Thanks for the recipe!!
