Sweet and Spicy Pumpkin Seeds

It is like candy pumpkin seeds.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 250°F.
  2. 2
    Remove and wash seeds from pumpkin.
  3. 3
    Spread seed on cookie sheet bake for 1 hour stirring occasionally, about one hour.

    Combine in bowl 3 tablespoons sugar, salt, cumin, cinnamon, ginger, cayenne.

    Heat peanut oil in large skillet over high heat.
  6. 6
    Add pumpkin seeds and remaining 2 tablespoons sugar.

    Cook until sugar melts and seeds caramelize (about 45 seconds).

    Transfer to bowl with spices and coat well.

    Let cool.

    Store for up to 1 week in airtight container.

This recipe is excellent--addictive! I actually found it first through CD kitchen--the version there lists coarse salt instead of salt. I use salt from my grinder, and the seeds never seem too salty to me.

    Mmm...what an intriguing flavour! I couldn't stop snacking on these and our 12 yr old who hates everything loved them. I did find them a bit salty although I stuck to the recipe but maybe it was just my tastebuds. I may try an 1/8 th of a teaspoon salt next time and see if it makes a difference. Thanks for a super recipe - nice change from the traditional roasted seeds.

    Mmmmmm, Pumpkin seeds.... This is a great recipie - I used 4 cups sedds and tripled the rest of the ingredients. We are having people over for a Halloween party tomorrow and I had planned on putting these out with pre-dinner cocktails/champange - but they are too yummy and we are selfishly keeping them for ourselves!
