Sweet Potato-Raisin Muffins

This is a good way to get kids to eat sweet potatoes or use up leftovers.

SERVES 10 , 10 muffins (change servings and units)

    Preheat oven to 350.

    Line muffin pan with liners or spray with cooking spray.
  3. 3
    In a large bowl, blend dry ingredients until well combined.
  4. 4
    In a separate bowl, mix remaining ingredients until well blended; add to dry ingredients and mix until just combined.

    Spoon batter into each muffin cup until 3/4 full.

    Bake for 25 minutes , until golden brown.

    Cool 5 minutes on wire rack.
