Sweet Potato Low-Fat High Fibre Cookies

Yummy and low calorie!!

SERVES 8 , 8 cookies (change servings and units)

Ingredients

    Take ¼ of a sweet potato, strip the skin off, and mash it down on a plate. Toss the sweet potato in a bowl, and poor half of 1/3 a cup of water inside the bowl. Mix the water with the sweet potato. Then, add the cinnamon and splenda in, and mix. Then, put 1-cup of oatmeal in, mix, and add another half of 1/3 a cup of water, and mix well. You can add more water if needed, but be very careful not to make the mixture to soft.

    After this, pull out a cookie pan, spray it with Pam, make cookies with the batter using your hand, and place them on the pan. It should come out to about 8 cookies.

    Finally, place the pan in the oven for 20 minutes, at 350 degrees. Take the pan out, set the cookies on a plate, let it cool, and eat!

    It tastes pretty good, and is a great switch up from ordinary oatmeal. Also, its very portable, so good to take on trips. The only other thing you would need is some protein.

yummm. i did discover the sweet potato has to be baked first of it won't mash. i used 1/2 of a sweet potato, 1 cup oatmeal, the cinnamon, 2 packets splenda, and just over the 1/3 cup of water, and it came out perfect

    I actually think these could have used less sugar. They are very good for a health-conscious person, such as myself, but definitely are not the kind of cookie you'd serve to guests. Very quick to make, delicious and nutritious!

    This is JUST what I was looking for - some healthy cookies to take to work for my lunches. If I wasn't dieting then I probably wouldn't make these again but, as I'm sure most dieters would agree, it's really nice to have something sweet and seemingly a bit naughty from time to time. I'm doing weight watchers and, by my accounting, this is no count/core, so even better. Not the tastiest cookie in the world (in my opinion), but a really yummy low fat recipe. Very easy to make, crisp yet chewy, and I also think they're pretty versatile. Next time I'm going to try them with some ginger and I also think they'd work with citrus fruits. I don't have a majorly sweet tooth and these were just right for me, but I can understand why other people might want to add extra splenda. A definte keeper - I can see myself making these every Sunday night for the week ahead. Thanks Maria!

    i didnt flatten the cookies so they came out like balls of oatmeal. i still liked it though because i love anything with oatmeal. These were interesting, thanks!
