Sweet Potato Casserole

You don't need to wait for a holiday, these are good any time!

SERVES 6 (change servings and units)

Ingredients

    Puncture potatoes with a fork and place in microwave.

    Cook, covered, on high for 20 minutes, or until soft.
  3. 3
    Cool.
  4. 4
    Peel and mash potatoes.
  5. 5
    Add pineapple, spices, and brown sugar.
  6. 6
    Place in baking dish; bake at 350* for 35 minutes.
  7. 7
    Sprinkle with marshmallows and bake 2 minutes.
  8. 8
    Sprinkle the pecans over the marshmallows.

Great. I lucked out and got some pretty sweet potatoes. I wanted a recipe with less added sugar and this was really nice. Brought out the flavor of the potatoes instead of just sweet. Didn't add the nuts as daughter hates nuts in food - go figure. Definitely want to keep track of this recipe for next time. Thanks.

    Thank you for this easy but yummy recipe. My duaghter is allergic to eggs and nuts, so I left out the marshmallows, pecan and nutmeg and still loved it. I forgot to buy crushed pineapple so I blended a 15oz chopped pineapple can with a 11oz can of mandarin oranges-juices and all and used 2 cups of the blended mixture becuase I doubled the rest of the recipe. Not to pineappley or orangey- just delicious. This is a keeper, Thanks so much!

    This is a great sweet potato recipe. Not alot of seasonings, but the end result is delicious. I brought this to a Thanksgiving dinner and my neice asked if she could keep the leftovers. Everyone liked it.
