Sweet Cornbread

My favorite corn bread. Sweet just the way I like it.

SERVES 12 (change servings and units)

    Preheat oven to 350°F Grease 8-inch square baking pan.
  2. 2
    Combine flour, sugar, corn meal, baking powder and salt in medium bowl. Combine milk, eggs, oil and butter in small bowl and mix well. Add to flour mixture and stir just until blended.

    Pour into baking pan. Bake for 35 minutes or until wooden pick comes out clean.
  4. 4
    For corn muffins, spoon batter into muffin cups 2/3 full. Bake for 18-20 minutes or until wooden pick comes out clean. Cool for 5 minutes before removing from pans.

    I hate to be the only bummer reviewer, but I found the batter way too thin. We also thought it needed more salt. Perhaps I inadvertently swayed from the recipe, cuz 226 people loved it I'm sure it is a good recipe, just not for us.

    A couple of added "secrets" for this: Use a CAST IRON skillet, then add a fine layer of half/half or light cream to the top of the batter before baking... try it, you will be AMAZED!!!

    I have the same recipe, except I add 1 tbsp of honey. It is SOOOOO GOOD!! I will try making corn muffins with it, never tried that!!
