Yummy!!! Recipe of Mum's.

SERVES 4 (change servings and units)

Ingredients

  • 200 g creamed corn (unsure of exact measurements)
  • 1/2 cup desiccated coconut
  • 1 egg, lightly beaten
  • 1 tomato

Directions

  1. 1
    Mix creamed corn, egg and coconut.
  2. 2
    Spoon into ovenproof dish and top with sliced tomato.
  3. 3
    Heat through for about 20 minutes--should be bubbling when you retrieve it from the oven.
