Sweet Chicken Skewers With a Peanut Dip

Honey, ginger, garlic, peanut butter, teriyaki and cilantro flavor these so fine that I know you'll want to try them! Be sure to soak skewers on water or apple juice for 30 minutes before skewering chicken. Serve as an appetizer, on a bed of greens or a meal.

SERVES 4 (change servings and units)

    Whisk all the ingredients but the chicken together.

    Place chicken in a zip lock bag add just enough marinade to coat the chicken and chill for 1 hour.

    Chill rest of sauce for dipping.

    Skewer chicken in a ribbon method onto soaked skewers.
  5. 5
    Grill on a well seasoned grill over med-high heat for about 7 minutes. Basting with the chicken marinade.

    Serve with chilled dip and fresh sliced cucumbers!

I was looking for a new appetiser. Of course it had to be good. This was spot on. Really it was just so so good and a really nice treat. This is a definent crowd pleaser!!!! Thank you very much Rita!!! What I like to do is quadruple the recipe. That way I have it on hand for another time!!!

    made marinade/sauce exactly as recipe detailed...cooked an entire, marinaded chicken breast for twenty minutes on an indoor grill set at medium...because the breast was an inch thick at maximum point , supplemented the grilling with 10 minutes in a 350 degree f oven to insure doneness...basted with marinade throughout the grilling and baking. result was a succulently moist breast served with a wonderful peanut sauce....what a great recipe.

    I am SHOCKED and AMAZED at how wonderful this is!!!!!!!!! It is THE BEST Asian dish I have ever made (or eaten!) in my LIFE!!!!!!!!! Can't WAIT to make this for company!!! OMG!!! I did sub pineapple juice for the apple juice, and used a 1/16 tsp. ground ginger for the fresh, it was all i had, but it turned out SPECTACULAR!!!! I baked it in a 375º oven for 25 minutes and it came out JUICY and VERY tender!!! (That time will depend on how thick or thin you slice your chicken, though. So just watch it, and teste it!) I basted every 5 minutes, too, with marinade I reserved, not from the bag. Cannot thank you enough, Rita!!!!!!!!!!!

    The cilantro makes the dish - don't use parsley! I added a bit more peanut butter to the dipping sauce just to thicken it. Fantastic recipe!
