Got this from Taste of Home. Thanks to this recipe my DH and DD will eat carrots. I was a little skeptical at first about the vinegar, but it keeps it from not being too sweet.

SERVES 3 (change servings and units)

Ingredients

Directions

    Place carrots in a covered microwave dish.
  2. 2
    Put in about 2 Tablespoons water.
  3. 3
    Cover and microwave on high about 3 to 5 minutes.
  4. 4
    Drain water.
  5. 5
    Add the brown sugar, butter, vinegar and salt.
  6. 6
    Toss until butter is melted and carrots are coated.

So easy and a big success for me and my baby. He wanted more carrots. And I omitted the salt. I used butter. I cooked the carrots 7 minutes at high. Thanks MsSally Made for Holiday Tag.

    Easy, colorful, and if nothing else great basic microwave carrots! We all thought the vinegar was too strong, but were divided about whether to cut it back to a few drops or just leave it out. The great part of this is that the components can be set up before you get serious about dinner, and then cooked quickly, with little effort, away from the activity on the stove. Made for Market Tag and served with recipe # 206727, rice, and steamed broccoli.

    Yum! What a great side dish. I made this as directed using cider vinegar and it was really tasty with some lamb chops. Thanks MsSally for sharing. And congrats on your football win!

    Oh dear, for our tastes the white wine vinegar overpowered the carrots. I would try again using cider vinegar instead and cutting the amount in half. Thank you for posting MsSally. Made for Potluck Tag, please see my rating system as I rate tougher than most.
